Ikana French Style Mussels

Method

  • Place oil and chopped onion in a large pot and cook a little to soften.
  • Add white wine, Ikana Mussels and their juice and parsley.  Place lid on pot and cook until mussels are open and cooked.
  • Add cream and stir to coat mussels.
  • Serve in bowls with sauce poured over and hot bread rolls.

Ikana Italian Style Mussels

Method

  • Place onions and garlic in a large pot with a little oil and cook for a few minutes until transparent, then add tomatoes.
  • Add pack of Ikana Mussels and juice from pack and place lid on pot.  Cook for 5-7 minutes or until mussels open.  Shake the pot a few times as they cook, this will help the mussels to open.
  • When cooked, add basil leaves and serve together with spaghetti and crusty french bread.

Ikana Mussel Fritters

Method

  • Place Ikana Mussels in pot with a small amount of water plus the juice from the pack.
  • Bring to boil and steam the mussels open. Shake the pot to assist opening.
  • Remove mussels from the shell and chop into small pieces.
  • Beat eggs, add flour, chili sauce, feta cheese and coriander and mix to form a smooth batter.  Add the chopped Ikana Mussels and mix in.
  • Place large spoonful in heated pan and cook on each side until brown and cooked through. Great on the BBQ.
